I had an intel i5 6600k, i sold it for a i7 7700k. My mobo is a gigabyte z170x gaming 3, 2x8 gb ddr4 ram. With the older cpu i could run in dual channel but with the i7 7700k i cant, it try to run but... Nope. So i have to run with two rams in single channel.
The question is... Is better buy a new hardware like i7 8700k (or i9 9900k) with the new mobo z370/390... Or better only buy a z270 mobo. (I think the z170 is the problem to run in dual channel)

Don't think the motherboard is the problem if it went well with the 6600k. Unless you bent a pin when replacing the cpu.
Have the latest bios (F20) on the motherboard?

Which cpu cooler is used? If like stock cooler, could there maybe too much pressure on one side,so if like that check mounting of the cpu cooler, that it is snug on al four sides.

I have a f22 bios drivers, so i7 7700k in single channel works. But in dual channel nope. When i had the two cpus i tried return to i5 6600k and dual channel works after try i7 7th. So idk why the fucking fuck not work dual channel in the i7. I have 700 watts psu, an cooler master hyper 212x max temp 70-80°c playing games, 40-50°c at rest. And, i returned to amazon the first i7 7700k thinking that was defective but when try new i7 doesnt work either.
