I heard Celeron G1840 could be a good cpu for low end gaming but how about its overall performance? When it comes to video editing, photoshop, or just everything in general, is it fast enough?

I'd go for the Pentium. 8 GB RAM is still enough for most tasks you throw at a computer these days, as long as you aren't leaving 50 browser tabs open.
Enough that you'd notice in (some) games with a decent enough graphics card.
Still, with only 2 cores, you'll struggle a bit to run games that an i3 would run a bit better due to hyperthreading and higher clocks. The higher clock speeds will help it out vs. the Celeron in all the other tasks you mentioned as well.
