6700k & 1070 should manage, shouldnt it?
I have a 1070 and a G-sync display and you won't be hitting 100 FPS constant on most any new game, not even if you're playing at 1080p/maxed. You can forget about 1440p or, god-forbid, 4K. The only new-ish AAA that I can get over 100 FPS constant is Shadow of Mordor and that's from 2014. For example, I just got Watch Dogs 2 and at 1080p near-max (Ultra preset plus some additional higher settings) I get anywhere from 65-80 FPS indoors to 40-50 outdoors, average. Luckily G-sync makes it bearable outdoors.
In your case, unless you plan to play games like CS:GO or LoL or some similar marginally-intensive game, or are planning on using medium graphics settings at 1080p, you will likely get about under 100 FPS and about 10-20% higher FPS compared to me with your 6700K depending on the game. So I would go for G-sync with such high refresh rates, or a much lower refresh rate display (mine is 75 Hz).
