I'm going to get GeForce GTX 1080 Ti AMP Edition. And i'm wondering if stock cooler is going to be enough for overclocking this card. If not, should i get GTX 1080 Ti from another company or just buy aftermarket cooler?
Sure it is. It is very uncommon to replace the stock coolers on graphics cards. Apart from switching to a waterblock, altering the graphics card cooling is more or less replacing fans.

On a card like that, very much so. As stated the only reason would be to slap a water block on it unless your talking a founders edition, which we aren't.
