Is it possible to have an m.2 or ssd and only that?

so recently I bought an M.2 SSD and put my OS on it. I had a few difficulties to start with but ended up figuring most of them out except for one. I can now install things to my old hard drive but I was wondering if anyone knew if it was possible to only use the SSD is a boot drive and use my old hard drive for everything else. preferably it would be better if I could use the previous data on my old hard drive as well.

You can have the SSD as the OS drive. And most/all of your applications. Makes little sense to install applications on the HDD.

The applications that currently live somewhere in your old HDD are null and void. They'd need to be reinstalled.
Ideally, you copy anything off that drive you really want to keep, and...

Ideally, you copy anything off that drive you really want to keep, and delete everything.
Then, copy those things back and use the drive as desired.

You can have all that other stuff on the HDD. doc/music/video/etc.
