Now this may sound odd, but I have recently gotten a GTX 780 and wanted to know if it was possible to replace it's outer case with the GTX 480's, and will the 480's massive heat sink help at all with temperatures?

No, that isn't possible. There is the PCB or printed circuit board with all of its integrated parts, GPU, heatsink, fans and the shroud which is that plastic or aluminum outer casing. The 780 and the 480 aren't even in the same country and as such they aren't compatible(parts are not interchangeable in any way shape or form.
