Is it possible to trade schematics?
Say I wanted a droid component. Can a droid engineer make me a schematic of
the component, trade it to me, and I can then use it in my factory, even if
I have no droid engineer skills?

YES.
You can make and sell and trade schematics and you'll also be able to make
whatever the schematic is regardless of what profession you are.
There's just one little catch which is, you need the specific (exact same)
resources that we used in the schematic.
So, it might be a good idea to talk to someone about how much and what types
of resources you will need to have a factory run of however many you want.
