Solution
Second build has motherboard that will not allow overclocking of either CPU or RAM. Both builds have PSU I would not dare to use on such expensive equipment. So pick first build, drop LED fans and put the right PSU instead (Corsair RMx, RMi, Seasonic Focus Plus, EVGA G2 or G3). A better motherboard like AsRock Z370 Extreme 4 would not hurt either.

I changed my GPU to an EVGA GeForce GTX 1080 SC Gaming and the motherboard to an MSI Z370 Gaming M5, Socket-1151, is that good enough. Any suggestions for a power supply? :)

That does not change power requirements, they are still same. See my first reply for list of recommended PSU.

okay. I decided to get the Corsair RM750x, 750W PSU. Good enough right?

What is this for? If it's just for gaming you would be fine with an i5 8400 and don't have to worry about the cooling. For gaming the i5 8400 will perform almost as well as an 8700K https://www.pcgamer.com/intel-i5-8400-review-the-best-new-gaming-cpu-in-years/.

thanks for the answer. I will look into it.

Absolutely.
