Websites that sell their product claiming to be able to monitor activity on an iPhone, are those even real? Because I heard that key loggers can't even work on iOS....

iOS is a sandboxed OS. No app can affect any other app, take information from another app, or edit system settings. A keylogger can't work on iOS unless you have jailbroken it.

But, an app can log your keystrokes if it has a keylogger in it and you are typing in it. Keyboards could contain keyloggers, or apps can contain keyloggers, but they can't keylogger other apps (or in the case of keyboards, if you're not using them). If an app did contain a keylogger it either wouldn't be allowed on the app store or would be removed aqap.
