Hi, for christmas me and my girlfriend have decided to build our first pc together and I did some research before buying the parts I have and I was confident but now that I've researched deeper I'm worried that something might go wrong along the line, I have a few questions if anyone would be willing to give me their opinion on any of them please! so far we have

Ryzen 5 1600
MSI Tomahawk B350
Corsair Vengeance Pro RGB 2x8gb 3000mhz
Corsair TX-M Series TX650M

We're planning on buying either a brand new MSI GTX 1060 OC V1 6gb or a second hand 1070 but I'm a bit wary of buying a second hand card as I wouldn't know if they'd be reliable incase they'd been used for mining etc. What's your opinion on second hand cards?

I've read that people have successfully overclocked their 1600 to 3.8ghz with the stock cooler without the temp being too high, just wondering if this is something I'd be able to achieve as I've seen mixed opinions? also I've read that the CPU might not work with the motherboard right out of the box if the motherboard was produced before the 1.3 BIOS update that came out that enabled R5 support, I've looked all over the box and can't find anything that indicates what BIOS its currently running, if it isn't compatible will I have to send the motherboard away to be flashed or would I be able to update the BIOS with a USB drive? also I'm worried about the RAM as I've read that people are stuck on 2133 and that the motherboard will only support up to 2667? just wondering if I'd be able to achieve 3000mhz with my RAM? sorry for the long post and all the different questions! its our first pc build and we're really excited for it we're just worried that somethings gonna go wrong or not gonna work! thank you!

Around £750 or £800 max all the parts listed we've already bought though just haven't bought a graphics card or case yet

Buy an evga card they honor balance of card warranty when sold to next gamer. Just have to check what the balance is before buying. https://www.evga.com/warranty/graphics-cards/
You can overclock the 1070 to tears and it wont breath hard. Put 1060 to shame:]

We have everything we need at the moment we're just lacking a case.

our parts are:
Ryzen 5 1600
ASUS ROG STRIX 1070
MSI Tomahawk B350
16gb Corsair Vengeance RGB PRO 3000Mhz
Corsair TX650M
(I have a old HDD we'd be using for now until we get a SSD)

We're planning on attempting to overclock the CPU to 3.7 or 3.8ghz with the stock cooler. (as our budget has exceeded a lot as it is lol)

A case we've both agreed we like is NZXT H500 but I've seen mixed reviews about the airflow of this case, I'm wondering if I'd be able to achieve decent temps with this case if I maybe add a couple of 140mm fans on the front? We also like the look of NZXT S340 but torn between the two.

We'd be using the PC for gaming, streaming now and then, music production and video editing, thanks!

Yes, the Ryzen 1600 will work right out of the box.
Yes, you can OC the RAM to get 3000Mhz or more. Out of the box, the RAM might settle at 2666(It happened with the B350s, the b450s have improved RAM compatibility) for stock settings. As said, even in worst case you should be able to OC the RAM beyond 3000MHZ.
