Personally I would get a 850W PSU for more overclocking and upgrading headroom if I wanted to run two GTX 970 on SLI. But if you are running only one, the 750W PSU would definitely suffice.

For gaming at 1080p you can get around 70 fps on BF4 at 1080p with just one GTX 970 at stock speed. A second one isn't really all that necessary. You could also simply get the Gigabyte G1 Gaming GTX 970 instead of the EVGA one you have currently selected. It costs a little bit more but will allow you to overclock the GTX 970 a bit more as well. The difference won't be very significant of course.

For video editing you really want to look at the number of CUDA cores on the GPU. The GTX 980 has about 30% more CUDA cores so that is one option. SLI works too but it doesn't scale 1 to 1 for video editing, so two GTX 970s does not mean you get the power of 2x CUDA cores. How well it scales depends on what video editing platform you are using and whether it even supports SLI.

32 GB of RAM will definitely be good for video editing so go for it if you can afford it. Ram speed isn't as important for gaming but for video editing there might be some noticeable benefits.
