I have an EVGA GTX 1080 Ti that has both a 6 pin and an 8 pin socket and I am swapping it out with to a power supply that has a 6 pin with an additional 2 pin to make an 8 pin connector. Is this a compatible setup or do I need a power supply with both a 6 pin and an 8 pin connectors for both the sockets on the gpu?

Get yourself an adapter that will connect your 6 pin GPU socket to 4 pin molex jumpers like the old ATA HDDs use... or get a PSU with the right connectors. Something like this:

what psu do you have? (whats the wattage of your PSU?) most likely if you don't have a 6 pin you'll most likely need a new one because it's either old or a low power limit
