Yes, I think.
I think you meant the samsung 970 to replace the intel 7600P
If so, that is excellent.
If you need 2tb, then buy a single 2tb 970.

And, yes on the D15s. It is as good as you can buy and more than enough for a 10600K processor.

can you give us more details on what you plan to play, resolution, and what monitor/tv you'll be using? It'll help.
Im planning to play games like Hell Let Loose, Mount and Blade Bannerlord, GreedFall and games like that. Maybe possible Cyberpunk when it comes out if the pc can handel it. Basically some demanding new games that my current pc can't handle. I haven't thought about a monitor yet but maybe a 27'' or something like that and 165hz if possible. Not planning my upgrade my monitor just yet though.

A balanced gamer will budget 2x the cost of the processor for the graphics card.
You are spot on there.

Some thoughts:
The intel 7600P does not look like a good unit to me.
The sequential performance is sub par.
Samsung 970 or 980 would be better.

I like the noctua coolers for simple mounting and quiet operation. NH-U12s would be good, the very best would be NH-D15s.

A good cooler will keep thermals under control and allow a higher turbo without resorting to overclocking.

Would a NH-D15 fit on the i5-10600k? I'm kinda new to this so sorry about my confusion

Your case has 170mm available for air cooling.
The NH-D15 needs 165mm, so from that point of view, it is ok.
The problem might be with ram clearance,
