Question is the performance gap between a none k chip and k chip still minimal?

its been awhile since I looked in to this, in selecting my cpu, no plans on overclocking, is the performance difference between a none overclockable part and one that can be still neglectable? sory for the basic question, thanks for the time in advance.

The difference between the K and the non-K SKU is that the processor is unlocked on the K SKU's, so the only thing you can overclock is the memory/integrated memory controller. If you're not getting a K series processor, you can get a B series chipset instead of a Z series chipset.

Generally the non-K chips also ship with slightly lower max boost frequencies, but we are talking 100-200Mhz compared to 5+Ghz so not that big a difference any longer.

Not sure if it is still a thing, and it would very much depend on the chip, but occasionally non-K chips will have a feature or two flipped on that K chips have disabled. This is differentiate them as 'business' CPUs.
