Is there a reason to have 1 boot SSD, and 1 app SSD?

I am researching a new PC build, and I was going to do a 3 drive setup as below, but I am wondering if I will get any benefit with having 2 SSD's for my purposes..

1.) 256GB SSD Boot drive (just OS and a few non gaming apps like browser, office, etc.)
2.) 500GB SSD for games. (intention is to keep them isolated to just 1 drive that wont be busy doing anything other than running the games)
3.) 1TB HDD for data and general storage.

Would this setup be optimal for gaming, or would it be perfectly fine to just get a larger SSD and put the OS and games on it, then use the HDD for data. I like the separation of the 2 SSD's for boot and games as I can clone the OS drive if needed to provide some disaster recovery, etc. but I'm curious if there is a performance benefit to keeping the games isolated to a dedicated drive or not.

I have got almost the same except for the500gb -> 1tb ssd.

1) os all the programs + 2 favorite games I play alot.
2) for big games I play once in a while ( cyberpunk 2077 soon , witcher 3 , and black desert online)
3) data storage , photos , movies , projects from school , software developing.

edit: some typos and I recommand a nas in the future.
