Is there a way to hide hidden files and folders for ONLY the desktop?

I hate seeing 2 system vol info's and 2 desktop.ini's on my desktop...

Make sure you have enabled the Hide protected operating system file(Recommended).

Those are the OS supported files. A Desktop.ini file is a file that determines the way a folder is displayed by Windows and you don't need to mess with that. Keep it as it is and you don't need to go looking for files like that. Your OS will look after that file.
