I play Witcher 3 with all settings cranked up to MAX. As a result, the best my GPU can do is 60fps. Is there any benefit to me if my new monitor is 120Hz?

All depends on your preference and playstyle. If your competitive or like fast paced gameplay, the 120hz at 1440p is a no brainer. I've got a 1440P panel at a overclocked 96hz and it feels absolutely stunning in titanfall 2.

4k 60fps is awesome for the slower paced RPGs, RTS, simulator and scenery type games out there.

I'm generally happier with higher settings and not all that impressed with higher framerates. I can live just fine with 60 or 75Hz/fps.

My son takes that even a step further - even willing to give up smoothness in his FPS games for higher detail settings.

All in the eye of the beholder.

I have 3 monitors
60hz
75hz
120hz

HUGE difference even between 75 and 120. If you don't have the horsepower to push 120fps then you won't notice the difference.

GTX 1180 TI :) One can dream. The problem with 4K is can't get great FPS without bleeding edge tech. Even then, all it takes is the next big game engine to put your bleeding edge GPU in its place. Look at Tomb Raider. It played fine on my PC. Then, Rise came out and I had to turn my graphics settings down. It was using a juiced up version of its original engine, not even a new one.
