As far as Ethernet goes Cat 8 is the highest you can get. The issue is you are limited in cable lengths, Cat 7 network is 100m @ 10 Gbps. Where Cat8 is 30m and up to 40 Gbps.

I'd also worry a little about where you get the cables. Amazon is the worst.

But regardless of source, as an example of being careful: Bluejeans cable once pointed out that when tested on a Fluke, the majority of cat6a cables they came across were cat5e's in disguise.
