Case:
Antec Three Hundred Midi Case (will this case fit two gtx560ti's)?


Graphics Card:
Asus 1gb Geforce Gtx 560ti (maybe 2 in sli later on)

Any opinions and tips welcome

Looks shiny enough, not sure on the case/sli point but I'm sure some 300 owner could help with measurements

Yes, I think the 300 should be fine. You could save a little money with a TX750W, which would still be very high quality, if that matters (http://www.newegg.com/Product/Product.aspx?Item=N82E16817139021).
8gb RAM might be wise.

Yes, this case will fit two GTX 560s. It might be a tight fit, however, they will fit.
