I want to know if it's best to use my current setup, or upgrade to this setup. I would obviously switch out the graphics card, and buy new ddr4 memory if I did upgrade if it was needed. I use this machine to stream on, game, and edit youtube videos.

Edit: Also if I did upgrade to this pc and switch out my graphics card, how much do you think I could sell my current computer for?

My current setup is as follows:

i7-4790k 4.00 GHz
16 gb ddr 1600
Gefore Gtx 1080 8gb
Windows 10 64 bit
1tb hard drive
asrock z97 anniversary motherboard

What I'd be buying:

Pixel PC R5 2600 Tier 6 Gaming - Full RGB
Ryzen R5 2600 6x 3.4Ghz Processor
Gigabyte B450 Aorus Pro WIFI Motherboard
Gigabyte RX 570 4GB Video Card
Giel Evo 8GB DDR4 Performance Memory
Samsung 250GB Evo 970 M.2 Solid State
Cooler Master Liquid Cooling 240L AIO
Cooler Master - MasterBox MB511 RGB Case
Cooler Master MasterWatt 650W 80+ PSU
Microsoft Window 10 Home Full 32/64 Bit

Solution
The only real advantage of the Ryzen 5 2600 is the additional cores and threads for multithreaded workloads. Aside from that your current system has more RAM and a better graphics card.

Agree with drivinfast247, install an SSD as the boot drive and the system will feel a lot quicker.

I think you current system is quite powerful, I would not suggest you to go for the upgrade that you have mentioned.
If your really want to upgrade then get a ryzen 7 or i7 9700k. Also you are good to go if you just install SSD in your current system
