For productivity take the 2700x, if you are just gaming the 3600 is the better choice for dollar/frame.

speed wise, the 3600 takes the lead with 3.8 ghz vs the 2700x with 3.6ghz but losses 2 cores/4 threads
I do know that a 4 ghz with 6 cores is slightly faster than a 4ghz with 8 cores

I'll be using the CPU for...
Discord - watching Twitch/anime on 1080p - WoW / LoL (both are games) - Spotify
all at the same time

note: I also use 2 monitors

so I'm better off with the 2700x, right?

Your listed uses are at the trivial end of the spectrum - I can watch 4k videos with Discord, Chrome/FF with ~30 tabs open, triple monitors while playing WoW perfectly fine with my i5-3470 and GTX1050.

If you were live-streaming OUT to people on Twitch/YT/etc, then you may need the 2700/2700X for video processing and encoding.

nothing wrong with being future proof, not to mention my budget can afford it :'d
