Is ultrawide worth the premium and issues with 21:9?

I just recently bought an ultrawide monitor and i love the aspect ratio, however i returned it because i didnt like to color reproduction of the VA panel it had since i had come straight from an IPS panel. I am considering either getting a 34 inch gsync ips monitor or a 27 inch gsync ips monitor. I feel slightly more closed in when i went from my ultrawide back to my 27 inch. Single player games are amazing with the 21:9 aspect ratio but another question is will my gtx 1070 be able to run 3440x1440p or if it will be better of with a 2560x1440p monitor instead which would be cheaper and more games support it.

Depends on if the games accept the wider resolution. I know WoW supports 21:9, which in heavy, large battles is a good help being able to view more of the field, but if your major interests don't support the view, you'll still be stuck in 16:9 but letter-box banded.

IPS has the best color saturation, then VA then TN brings up the rear.

Standard 1440p will be cheaper than UW 1440p monitors for the most part, and will have options such as higher refresh. The UW resolution will be harder on the gpu to reproduce, especially at ultra or very-high detail settings, you are starting to get closer to 4k resolution and would benefit from a 1080 over the 1070. A 1070 doesn't have too many issues with 2560x1440 /60Hz-75Hz, but fps can suffer if...
Thats entirely up to your preference. I myself own an Acer Predator X34, and while I absolutely LOVE it for casual games, I can't help but feel that I'd be getting a better competitive experience if I went with a higher refresh rate panel. Honestly, the 1070 should run it just fine, but I can't give you a definitive answer without knowing what specific games you'll be playing. If you're planning on streaming, I'd HIGHLY recommend staying away from 21:9. Too many issues with not being able to stream while playing full screen etc.
