iSCSI Array Questions

Hello all!

I am currently in the process of working on a set of equipment for a cliental that is looking at a 20 or so piece system of security IP cameras. I have currently been working onto the task of coming up with the storage solution for said system and have come through with some basic requirements:

The data stored has to maintain its full 1080P quality until it is deleted.
The footage must be stored a minimum of one week before auto-deletion.
All footage must be stored on the drive. The client does not trust auto-highlight and motion capture systems just yet.

Now, being a strong proponent of server-modular systems, I have been putting alot of my focus onto refurbished server components. Unfortunately, my go-to solution for alot of computing needs in this area, the Dell R710, has proven to be insufficient for the space requirements necessary here.

I have finally resolved to try and tackle my long-standing phobia on iSCSI interfaces, as I figure it is the only thing that could provide the redundancy, expandability and raw-storage capability that is required here. Currently, I have been looking at the Dell Powervault series for my first consideration. This Link Here is what I have been mainly looking towards at the moment as it has more than enough drives for the first zone-ingest server at speeds that I am pretty sure will be more than fast enough to take in the streams required. (feel free to correct me if I am wrong here)

The issue I am finding myself in is just how I am supposed to connect this system into my larger server array. I am looking to get another R710 as my interface and main operations server, but am finding a disconnect in the connectivity that I would need to link up with. I see the Powervault uses miniSAS connectors, but am finding it nearly impossible to find any PCIe expansion cards that accept a SAS input. IS there something I am missing here for that connectivity, or am I somehow supposed find something to transfer SAS to IP traffic?

Another issue I am finding is in regards to just what level of redundancy these storage arrays would be able to offer. Do these usually have some form of RAID controller that I could set up custom hard drive configurations with, or is there something extra I need to purchase to make that happen?

I finally would like to ask the question of compatibility with these servers. Likely our first operations server will be running either Ubuntu virtualization or VMWare hypervisor (haven't looking into prices of either just yet). I am wondering what issues we might run into with iSCSI and VM's? Is it more or less a native solution where it would appear like a regular drive to the hypervisor, or would I have to find an OS-base solution to ensure compatibility?
