Question Issue with custom resolution and refresh rate

Hi guys, I'm having some issues getting a custom resolution (1600x1080) working with Fortnite. The reason for wanting to try this is for the increased vertical FOV in game. I'm trying to set this up such that the resolution only changes when the game is launched and automatically reverts to the default desktop resolution after exiting the game.

Specs:
CPU: Intel i5 8400
GPU: Sapphire Nitro+ Vega 64
Monitor 1: Acer XF250Q - 240hz - Displayport
Monitor 2: Acer XF240H - 144hz - Displayport
Monitor 3: Iiyama ProLite XB2474HS - 75hz - HDMI
Native resolution on all monitors is 1920x1080 and they are all connected to the Vega 64.

First off, I changed the relevant parameters in the Fortnite config file. I've also added my custom res using CRU. I can launch the game and it will apply the custom resolution without any problems. In Advanced Display Settings, desktop resolution shows 1600x1080 and active signal resolution is native (1920x1080). This is all fine, and when I exit the game my desktop reverts to its native resolution.

The problem I have is that when I launch the game under these conditions, my refresh rate drops to 144hz. I can change this back to 240hz while in game but then the problem is my desktop stays at 1600x1080 after I exit the game (active signal res changes to 1600x1080) and I need to manually reset it to 1920x1080.

Screenshots of the CRU resolutions below - I simply created the new resolution by copying the parameters of the default 1920 resolution, and changing this to 1600 instead:

In addition to this, I've tried to emulate this on monitor 2 (XF240H 144hz) and a similar thing happens whereby the refresh rate is decreased when the game is launched in the custom resolution from 144hz to 120hz.

Needless to say I am thoroughly confused. It doesn't make sense to me from a bandwidth or pixel clock POV since running a lower resolution at X hz shouldn't be a problem if a higher resolution can run at X hz as well - unless I'm fundamentally misunderstanding how this works.

What am I missing/doing wrong here?

What are you trying to achieve with a 1600x1080 resolution?

1920x1080
1680x1050
1600x900
1360x768

Try one of the ones listed above instead.
Thanks for the reply. As I mentioned above, basically because of the way the game stretches lower/smaller resolutions and aspect ratios, it increases the vertical field of view i.e. you see more. Its not totally dissimilar to the way CS:GO players play with lower aspect ratios to make character models look wider for helping aim.
