Would I change the subnet mask of the main PC or each individual item I have which are spread over two switches with diffent ranges of IP addresses, ie 192.168.0.1 and so on, and other range 192.168.1.1 and so on ?

If you change the mask you must change it on all devices. Mostly the DHCP server since few people hard code ip on a lot of machines.

You could just change it to 192.168.0.0/23 and it would map over both blocks. You would not have to change the IP of the end devices that are hardcoded but you should change the mask.

There are very non standard ways to make it work with the masks different but you would never do it other than maybe as part of a migration plan where you can not change then quickly enough.
