Judge my next build

Looking to build a new rig this year, probably spring-ish. I built my first, and current, computer a while back on a relatively tight budget in case I broke stuff, it'd be replaceable without any major strokes or heart-attacks. This time I want to go bigger. Right now I'm just looking for critique on how bad/good my setup is as it stands. I'm open to suggestions for swapping parts, but I'd like to keep the overall rig somewhat similar. Also, there's no case on the list because I'm still deciding. Seriously considering getting one from CaseLabs though, as I like their options.

Oh, and first post after browsing these forums on and off for a few years :)

What will the primary use of this pc be?

For gaming, 16gb of 2400 speed ram will be all you need.
That will allow you to use GTX980ti sli.

On the cooler issue, what is your objective?
14nm skylake runs cool, so no exotic cooling is necessary to get the max oc.
Look for a noctua or Phanteks cooler with a 140mm fan.
You will run cooler and quieter.
On a top end build, you might want to invest in a binned 6700K .
Here are some stats from silicon lottery:
What percent can get an overclock at a somewhat sane 1.40v

I7-6700K
4.8 12%
4.7 47%
4.6 91%

And, build using a ssd for windows. The Samsung 950 pro m.2 NVMe 500gb drive is as good as it gets.

6700K not best choice.
You budget allows buy 5820K.

And if you want SLI, Buy 980Ti, not 980.

I had thought about doing a 2011 socket build a while back but moved away from the idea due to my not having any experience with overclocking. That and I'd like something with a lot of potential longevity, not that 2011 hasn't had a long lifespan, just that I have terrible luck and feel like Intel would announce it's next big thing immediately after I boot my system.
As for the 980ti, I...actually thought that's what I had on it. Guess I didn't add it when I went to switch it last time...

Primary use is going to be gaming, possibly some low end video editing for youtube and what-not but nothing too intensive in terms of editing software.

I added the SSD to the build, was debating on what kind to get so I hadn't added one to the list yet.

As far as cooling goes, even though the system itself may not run super hot, my room has a tendency to get pretty hot in the summer. Pushes low 100s to high 90s most of the time so the ambient temp of my room is usually 80-85 unless I crank the A/C to arctic. Because of that I'm planning on doing a custom water cooled loop partly because it looks damn cool and partly because I know it'll help keep temps down in the spring/summer. Not doing anything super over the top, just cooling for the GPUs/CPU.

As far as the RAM goes, I had some of that stuff almost as a place holder to give a high ball idea of price for some of it, so I dropped that down to 32GB and might still drop it again before I purchase. Correct me if I'm wrong but I remember reading somewhere that either DDR4 or the skylake/ z170 chips run best with quad-channel setups, right? Or am I crazy? Also, thoughts on the board? I'm not set in stone on it, I just like ASUS since I've never personally had a bad experience with them and their GUI is nice. Also probably going to do a mostly black/white build so it saves me from painting.

Sorry for the long reply and thanks for the critique!
