Lapping and overclock potential

I am wondering if the "better" steppings are indicative of a flatter or thinner nickel surface on the shield, while lapping my cpu i noticed it was much higher around the outside edge and the nickel slowly disappeared in the center area? anyone tried any tests in this area?

The steppings has nothing to do with how flat the heatspreader is on the CPU
