I currently have a Toshiba Satellite P-555. I got it back in 2010 which means it's ancient. Heck, it doesn't even have a HDMI port.

My question is... can I take the bones of this laptop (the case I guess...I've only built desktops) and get all new internals: motherboard, graphics, processor, ECT....and rebuild it to today's standard like you can a desktop? I don't really want to drop $1000 or more on a new laptop if I can rebuild this and for cheaper. Thanks for your help.

No, that one is a little too old but you can save a lot if you don't need the very latest by getting a refurbished older laptop.

I often buy Dell mobile workstations pretty cheap on either Dell Outlet or EBay from a reputable seller that has lots of a model and then upgrade the specific parts that I want to like to an SSD, more memory, maybe a better CPU. (I search something like refurbished Dell M4800 or 6800 or another Dell model that is near what I want. I usually go with Dell because they are easy to work on and parts are available plus you can download the service manual before buying to see how much effort it would be).
