As For Liquid Cooling, I am not sure how much is to much or What size/Quantity of pumps i would need.. was looking for a little help here

I was thinking of going with the 3/8" ID fittings/tubes... Am unsure whether to use Barbs or compressions?
How Big of Radiator? Pump?

Is there a reason why you are changing to liquid cooling? Are your temps getting too high even with those VaporX coolers on the 5870s? If you are not having temp problems, why spend more money and take the risk of destroying everything with a leaky tube?

Other than hooking up a large radiator with a large, quiet low RPM fan, I am not aware of any substantial benefit to liquid cooling anymore.

Don't waste your money on the i7-960, I assume since you are wanting liquid cooling you are going to do some overclocking so just get the i7-930 and save some money.

What will you gain with liquid cooling, maybe a few FPS and that's it. It's not like you're going to all of the sudden blow all the games away. The two 5870s will do that anyway.

I agree, you can get really good results from a high grade HSF. Unless you're just wanting to run liquid. I would like to, but just can justify the expense, risk and what little I'd gain. Sorry if that's a downer.
