I was curious so I did a little research.

In English, striking a deal likely comes from the practice of actually striking hands at the conclusion of a verbal agreement. A sideways high five of sorts. A bit before shaking hands became commonplace outside of the upper classes.

But this word also has many meanings and uses which when you really sit down and think about it, is quite silly.

Strike up a conversation
Strike it rich, as in finding or obtaining something
Strike a blow, strike with a hammer, strike a gavel (which leads to several other phrases)
Strike out (as in begin a journey)
Strike out (as in baseball) (failure to strike a ball)
Strike a balance (another version of an agreement between parties)
