Question Looking at spending around $2000(AU) on a gaming pc, just wondering if these key components would be good enough.

CPU: Intel Core i5 8500
Motherboard: ASUS TUF B360 Pro Gaming Motherboard
RAM: Corsair Vengeance RGB Pro 16GB (2x8GB) DDR4
GPU: ASUS GeForce RTX 2060 Turbo 6GB

Any help would be appreciated, thank you.

A 2060 on average is about 15% faster than a 1070, and it's 6GB VRAM (vs 8 on the 1070) doesn't seem to hinder it, as it's GDDR6 is faster than the 1070's GDDR5.

As long as you stick to no more than 1440p for the most part, except on older games 4K is fine, you should be OK with it.

The only thing that struck me odd is why you opted for RGB RAM on a budget build, which is more costly and adds zero performance.

Looks to be the start of a nice, balanced build. How it'll perform specifically will depend on the resolution and refresh rate your monitor is but other than that, for something in the 1080p 60/144Hz to the 1440p 60Hz range should be perfect.
