Looking at SSD Solution, help/suggestions appreciated!

Hey guys! I am getting ready to build a gaming/Homework/light photoshop/homework rig...

The floods have killed any idea of me getting a mechanical HDD (until they come down in price) 1TB 7200 for over $125 LOL 25 more I can get a decent sized SSD

Anyways my question is this, here is what I plan on having on my HDD

Windows 7 Home Premium
WoW (with addons of course)
MS Office
Utilities from nvidia
HP Printer software (approx 400mb)
Photoshop CS3 yea i know old version but it does what I need for my ebay stuff

My Build so far is looking like:
i5 2500k
Coolermaster GX 750 PS
ASUS PCE-N10 PCI Express Wireless Adapter
ZOTAC ZT-50313-10M GeForce GTX 560 Ti - 448 Cores (Fermi) 1280MB (Free BF3 HOW EPIC IS THAT?! and I am planning on SLI them but I need to make sure that I have enough money and this card seems like it will do ok by itself until I can get money up for a 2nd monitor and if it's not available then well ebay will go this card and by then the 600 series should be out...anyways)
CORSAIR Vengeance 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800)

I have yet to decide on a case but I am really leaning towards the Coolermaster CM690 II

Eventually I am going to be adding a few WD 7200 RPM HDDS for music/movie storage and for right now I will be able to pull music over my network off my imac with itunes and that has a 500gb drive in it with lots of room for any additional file storage

Here is what I am wondering:

1. SSD Boot speeds are insane (watching a SSD boot next to a 7200 RPM HDD makes my head spin still) does that performance translate to applications/games installed on the SSD as well?
2. How hard are they to setup on a fresh rig
3. How hard is it to add the older style HDDs after getting up and running
4. What size should I be looking at to be comfortable on for a few months until the prices come down (looking at what I my needs are above)

Currently I was thinking ~120GB Could I get away with smaller and save a bit of coin or ? This would be my first personal experience with SSD and as I had in a post that helped me determine my vid card situation my first build since ~1998
