It is almost impossible to buy cat5 cables. You will only find cat5e which is rated to go 100 meters at 1gbit.
Cat7 cables are mostly a waste of money. They were not even fully certified by all the agencies because they provide almost no benifit over cat6a. You would only use cat6a if your equipment has 10g ports it provides no benefit if you plug it into 1g ports. Normal cat6 cables have no advantage over cat5e. They were originally designed to run 1gbit over 2 pair rather than 4 pair but no ports support it so it is a dead cable.

Just buy a cat5e cable that is pure copper with wire size 22-24. No not buy that flat or thin cable the wire is too small.

For the most part, cat 5 is cat 5, cat 6 is cat 6, cat 7 is cat 7 - for internal use.
If you're running through walls, or outside, or directly burying the cable, then other factors come into play...

For a basic in-home (or office) cable, anything that's 'pure copper', 'copper core' etc is = to any other of the same spec. Just watch out for, and avoid CCA 'copper clad aluminium' cables.
