Im just wondering if there is any compatibility issues (Mobo fitting in case, Ram compatible with new Z370?), what PSU would you recommend for this build and would 550 W be enough.

The difference is HUGE.

VS650 is quite frankly, low quality. RM650X is some of the best, rated 9.7-9.9/10 by Johnnyguru and protected by TEN YEARS WARRANTY.

550W is enough, but usually there's no difference in price between 550W and 650W, so might as well just grab Corsair RM650X or EVGA G2 650W. Seasonic is usually what most people would recommend as well, but it all depends on your local availability.

For a 1080, 550w is recommended minimum. If you plan on OC, I'd be tempted to bump that to a 650w, just for the headroom and piece of mind.
Seasonic G, focus, focus+, Corsair TXM, RMx, RMi, Evga SuperNova G2, G3, GS are good choices, but much depends on your budget as there are quite a few choices that'll run higher.

The Gigabyte GTX 1080, unless it's an Aorus, won't go over 200W even when overclocked. NVIDIA hard lock Voltage and all Windforce or blower cooler Gigabyte GTX 1080 has a single 8 pin cable, i.e reference design (even though the PCB for Windforce/G1 is fully custom). So even when overclocked I don't expect it to go over 550W anytime soon. Even with an overclocked i7-8700k (and I dread what game possibly pushing that 6 cores i7 that far) you are pulling up to 450W or 500W at most.

Still, there is usually no price difference between 550W and 650W quality PSU. Heck sometimes even 850W PSU of the same brand + tier are discounted to such price.

How much of a difference do you reckon there is between the Corsair vs650? to the rm650x for the huge price gap.

The VS is designed more for Office type usage, where even large power draws from graphics cards are somewhat consistent. The RMx is designed for gaming loads where power draws change dramatically, often going from almost idle to instant full power loads.

You shouldn't wear $100 basketball sneakers on a construction site, just as you shouldn't wear $100 boots on a basketball court. You can, but it's not advisable as that's not the intended purpose. Even Corsair's website says as much, the budget lines are not intended for gaming use, the higher level such as the RM, HX, AX are.
