500gb Samsung 860 EVO SSD
1Tb WD blue 7200
Intel graphics

The only thing I can't do on my PC is play newer games such as GTA V, CSGO, COD, Fortnite, etc. I'm looking for a GPU that won't break the bank completely but should still be able to run games coming out in the next few years in addition to the ones I listed. I was thinking maybe a GTX 1070 Ti? What do you think would be best for my PC in the $100-$300 range? More importantly, what reputable power supply unit should I use with this build? I'd like to reduce the chance of frying my internals when upgrading the PSU. Online calculators said I should require about 350-400W depending on the GPU?
Also, should I upgrade the CPU heatsink at the same time? Or is that not necessary?
