So here are my current system specs:

Case: Phanteks Enthoo Pro M
PSU: Corsair RM750x
Motherboard: Asus ROG Strix B450-F
CPU: AMD Ryzen 7 5800X
Cooler: Cryorig H5
RAM: 32GB G. Skill Ripjaw V DDR4-3600
SSD1: Samsung 980 Pro
SSD2: Samsung 970 Evo
Current GPU: Gigabyte GTX 1080

Approximate purchase date: Within the next two weeks

Budget: Between $500 - $600

Monitor resolution: One BenQ 1080P and one Asus 4K

I was looking at the EVGA FTW but their prices have been jacked up to out of my budget. These are the current candidates - is there any one better than the other?

My question is is it worth the money to spring for the EVGA FTW even though it's outside my budget or should I go with the Gigabyte which is the least expensive? I kind of want the Aorus but the large size and power consumption of the card is kind of a turn off.

I have no specific opinion of the cards you have selected. I opted to go with an FE and have been very impressed with it. I also upgraded from a 1080.

I game at 2K/144 on the installed system. I was running high settings and getting around 75 FPS for (such as) Division 2. Since the swap I run high/ultra settings and from the latest round of DX12 optimized drivers see around 110 FPS give or take.

My fear with EVGA is that in spite of the separation from working with NVIDIA, they state they will continue warranty work and keep back some stock for replacement issues and such. I have never had an issue with an EVGA card, actually consider them one of the top tier available, but cannot say that the new state of the partnership with its dissolution wouldn't be of concern to me.

Well, considering that EVGA stepped out of the GPU market I would look for an Asus Strix 3070 OC, comes out of the box with the fastest clocks, has excellent temps, double BIOS and is one of the less noisier GPU's in the 3070 line-up. I was always a huge fan of EVGA's warrenty service and upgrade policy, but since they stopped it's not really a viable selling point anymore. Gigabyte and MSI are no match for the Asus in this equation...

Without someone who has stripped off the cooler on all these and reviewed their PCBs, that would be a bit difficult...

Gigabyte Gaming OC: https://www.techpowerup.com/vgabios/226942/gigabyte-rtx3070-8192-201012
Gigabyte Vision OC: https://www.techpowerup.com/vgabios/226415/gigabyte-rtx3070-8192-200921-1
Gigabyte Aorus Master: https://www.techpowerup.com/vgabios/229231/gigabyte-rtx3070-8192-201128
Msi Gaming Z Trio: https://www.techpowerup.com/vgabios/234907/msi-rtx3070-8192-210518
EVGA FTW3 Ultra Gaming: https://www.techpowerup.com/vgabios/226788/evga-rtx3070-8192-201014

The size of the Aorus Master I get, but the Total Board Power at 300w is just 30w higher(tied with FTW3 UG) than Vision and Gaming.
The Gaming Z Trio is supposed to be a higher bin than the Gaming X Trio, and it has the lowest TBP of the 5, at 250w.

Folks have been hating on Gigabyte it seems, but my 1080Ti Gaming OC is still kicking since launch purchase. I guess they went to crap after Pascal? IDK...
Can't rely on EVGA anymore afterwards, so IDK about that one either...

Considering your circumstances, the Gaming Z is the most attractive of the 5 to me, followed by Gaming and Vision OC.

They do pretty good indeed, even though you should get the same service with all their products. Gigabyte on the other hand might have the worst warrenty service of them all :p

I think this is more a commentary on the state of market force than to say the service/product should be the same.

I don't think anyone out there buying a Corolla thinks they are getting the same quality level in build out and particularly the accoutrements as that same person considering an Avalon or even a Lexus. I wouldn't go so far as to say that one couldn't last as long as the other in service, but there are certain considerations and feature being given up on the aesthetic level. The (sometimes) significant price difference in the product(s) should be of major consideration during the buying decision process.

Edit- the Gaming X MSI 1080 that I purchased may well go up on a shelf for display when its service life is over. That is one well built and smexy GPU...

Normally I'd buy EVGA (and I've been buying EVGA since my first rig back in 2008) without thinking about it, but the fact that they are exiting the GPU market makes me less likely to buy one.

My Gigabyte 1080 has served me well but I am swapping out my primary 720P display (I know it's old) for a 4K, which is why I need the extra horsepower.

The Asus was way out of my price range which is why I'm not considering it.

I say take a look at the 6800xt as well. If you want to save more money look at the 6700xt. My 6700xt does decently at 1440p. But keep in mind, on the 3rd amd is supposed to announce new cards so before you buy it would not be a bad idea to wait. That said personally amd cards just seem to be better value at the moment.
