Upgraded my PC, but did a clean wipe and everything is brand new except for my harddrives which are a 1TB Samsung 870 EVO PRO for my OS and a WD 1TB for storage. Reason for my upgrade was I had a GTX 1080 and a very old CPU which wasn't cutting it anymore. So, did basically a full upgrade, I intend to get a M2 drive soon to replace my SSD as my main drive. I need a fresh windows install on my existing SSD however.

My GPU doesn't go above 75'-80'C even when pushing it, and my CPU rarely goes above 70'C.
Regards my actual issue, I'm clearly not getting the peformance I was expecting. With Ray Tracing enable even on low on WoW Shadowlands or Cyberpunk my frames go below 60fps. I'm able to play most games on nearly ultra on resolution 2560x1440 and I get about 100fps or less. If I MAX out graphics settings I'm lucky to get above 60, easily 40-50s when things are hitting the fan in terms of particles etc.
I've checked and in my BIOS everything is set to auto detect and my RAM is set to auto 3200Mhz etc.a I'm unsure what's causing the performance to dip far below what I expected. Checking the recommended specs for games that can run at max settings at 4K I meet all the minimum requirements, and I'm not even trying to run 4K but I'm getting low FPS.
Another issue I only discovered today, if I am running YouTube and then I go to open the sports video app I pay for to watch football I get a CPU error and the PC turns off. It doesn't do this any other time, only when I've got these two different web browser based video streaming websites open...I can't seem to replicate it elsewhere. Here is an example of a Windows Event Viewer of the error, it seems like maybe a CPU error?
