I'm soon getting another m.2 and I'll no longer use the one I have currently. would it be best to buy another heatsink or could I reuse the old heatsink from the old m.2?

m.2 heatsinks are largely marketing. Go ahead and use the old one if it fits.

Under normal operations which is small random i/o(some 90% of the time), there is no heat issue.
It is sustained sequential processing of 30-60 seconds where a m.2 device can heat up and throttle. That does not happen often, perhaps during a virus scan.
Your system will absolutely boot up and use an SSD as the OS drive.500GB HDD (forced to use as 'boot' drive as mobo doesn't have ssd boot option)
