So I just bought a m.2 ssd (A2000 500GB) and I can see it in the storage tab, I installed windows on it, I can boot on it, but I can't set it as boot priority since it doesn't show up as a bootable drive.
How can I fix it?

Solution
how can you boot from it then?

Sounds like you have another boot drive and windows is using that boot block instead of creating one on the NVME drive which is how the motherboard detects and then stores the driver for it.
