Media server recommendations...

Hey guys and gals. I am looking for some input on setting up a streaming media server on my CentOS box at home.

I need to be able to stream m4v, mp3, and mp4 files to game consoles, smart phones (Android and iPhone), Windows, Linux, and MacOS computers.

I would love to be able to stream to my phone over the mobile network while keeping things private, to save my bandwidth and keep from having the MPIAA / RIAA sue me... (My only interest is streaming to myself / my household content we already legally own).

mediatomb or plex would be good choices for a UPnP server, both can transcode files on the fly if needed.

if you don't need/want to transcode, simply expose your files via a samba share
