Here is my question:
So looking over my RAM on SPECCY it says its 1200MHz ram? That seems super under powered for this gaming PC. Am I reading that correctly? if its indeed 1200 MHz what should I upgrade to for the best performance??

1200*2, diagnostic programs read the true memory clock, it's the same for every double data rate ram. 2400 is double pumped.

2400MHz is fine, you would not notice all that much jumping to say 3200 (1600) ram.

It's a pretty solid system for the most part, do you think it's slow? Maybe a 144Hz Freesync/Gsync monitor?

Is Windows installed on the SSD?
