Memory Question

I should know this, but I guess I missed this in my A+ cert course last year. but my question about my new mother board, and this ram. Asus M2N-MX SE Plus, and this ram. G.SKILL 4GB RAM my question is about the channels that the ram run on. it says one channel per ram stick. ( doh but I already ordered it) the mother board say duel channel Im guessing that means it will take them, but as i said I should of learned this a year ago but I mite of blanked out in class or something when we were going over memory.

Also Just for my info would it hurt to preset the Ram in bios before you install. like lets say set it today and it come in Monday, and do I set it first under the old ram, or swap it out and set it up after I put in the new ram. as I was saying this is just for reference.
