i am looking to upgrade from my current set up-
Fx 6300,
R9 270x Hawk,
16gb ram 1866.
and i am wondering what would be the minimum needed to play games at 1080p 60fps locked at ultra/Very high but would like to aim for ultra settings, games like the total war series, Hitman, Battlefield 1, mostly AAA games. looking for any advice.

your probably looking at a RX 580/GTX 1060 paired with an i5 7500 (for best frames in high cpu demanding games and more consistent fps) or an i3 7100 which will get the job done but wont be the best at high CPU demanding games. Then theres also the G4560, where if your short on a budget, well, its a great budget gaming processor.

I would recommend you get an RX 580 8GB for sure, and a G4560-I3 7100-I5 7500 depending on your remaining budget.

is the i5 7500 enough to play totalwar games 60 fps ultra? i had heard i would need something like an i7 4790k at least.

if i am getting the 7500 at 175 should i not just buy the 7600k at 205? also what about ryzen 5 1500x or the 1600?
 
The Ryzen 1500x is out performed by the i5 7500 in gaming and the same can be said about the 1600x and i5 7600k. If you want to dish out extra cash for the i5 7600k, you would also have to get a more expensive Z270 motherboard to overclock the processor and a good aftermarket cooler to support the overclock.

I to think the i5 out performs the ryzen 5s in gaming and i don't plan on doing any content creation so the extra cores are useless to me. Z270 motherboards are expensive but it also offers me the choose of getting a 7700k in the future (might be overkill for just gaming tho...) i already have a 212 evo not saying it is a good aftermarket cooler but it seems to do an ok job on my FX 6300 at 4.3 Ghz never goes above 51oc on the core.
