For a monitor which has:
5120x1440p
120hz

What kind of station would i need in terms of CPU and GPU?
i would like to hit around 70 fps on games like Minecraft and Kerbal Space Program

A 8th/9th gen. Intel i5-i7 or 2nd gen. Ryzen r5-r7 along with a gtx1080 or higher.

Would and Intel i5-6600K with gtx 1080 (or ti) would work? Would it have bottlenecks?

Not 70fps, maybe 50fps or therabout, depending on the games you play.

Unless you are intending to use huge texture packs and hundred+ mod packs....

I am in no way an AMD guy but how would that work out in AMD?
Whats equal to 1080 and i5-8400 in AMD?
