I had 2x Dell T3500 desktops. One of them was giving me issues and I had not used it for a while so I gutted it.
One of the t3500 units had: Dell SNPP382HC/4G x3 in it and the other unit had: HMT325U7CFR8A-H9 (2gb x4) sticks in it

I removed the 4gb sticks and installed them in the 2nd unit, can I use the old 2gb sticks in the 2nd unit (I would be using 3 sticks, there are 6 slots in total)

the weird thing is that the SNPP382HC/4G runs at 1.5v and the HMT325U7CFR8A-H9 runs at 1.35v. I installed the 4gb (x3) sticks and the computer runs fine, and according to crucial, the computer can take either 1.35v or 1.5v ram, just unsure if it can take both at the same time. like I said, I removed the 1.35v ram and installed the 1.5v ram, still have 3 slots available, is it worth risking it for the extra 6gb ram (@1.35v, with 3 sticks also being @1.5v) or is there a possibility of messing something up?

also does it matter if one of them is ecc and one is non-ecc, the t3500 can handle both but is it safe to mix them?

Mixing ECC/nonECC you should always disable the ECC abilities of the mobo because the non ECC will fail the ECC test at startup hanging the boot. Though that is no guarantee that they will work together.

For voltages see if the (1.35) RAM sticks you have are capable of running at 1.5V (some can usually have to find the info from either OEM/ODM) as the slots can only run at one voltage and it is possible for higher voltages to damage the lower voltage RAM sticks.
