I'm not clear on this:
Do mobile phone apps use the same security protocols that a VPN uses?
If so, what are they?

They do not, they are just an application, just like your browser is an app on windows. If they encrypt data that they send out then it's "them" and not on the VPN.

A VPN is a networking thing that runs between your actual network and what your OS presents to you & your apps. Apps can use what is presented to them so if they need a network connection and you are connected to a VPN, they will go thru that.
