set up my msi gtx 1070 couple of days, im after a high end monitor, got my eye on maybe the best two monitors out there, asus pg348q or the acer x34, but got a few questions, first my specs

GPU: MSI GTX 1070 Armor OC 8GB
Intel Core i7-2600K 3.40GHz (Sandybridge) Socket LGA1155 Processor - OEM
MSI Z68A-GD65-G3 Intel Z68 (Socket 1155) DDR3 Motherboard
Corsair HX 750W ATX Modular SLI Compliant Power Supply (CMPSU-750HXUK
Seagate Barracuda 7200.12 1TB SATA 6Gb/s 32MB Cache - OEM (ST31000524AS) HDD
Crucial MX100 256GB SATA 2.5-inch 7-mm SSD
G.Skill RipJawsX 8GB (2x4GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit (F3-12800CL9D-8GBXL )
Samsung SH-S222BB/BEBE 22x DVD±RW SATA ReWriter (Black) - OEM
Cooler Master Hyper TX3 CPU Cooler (Socket 754/939/940/AM2/AM3/775/1155/1156)

first of all are my specs compatible with these monitors, i mostly want to game on 1080p, on a ultrawide with gsync and with as much refresh rate as possible, and have monitor ready for 1440p high refresh rate

I swapped my 1070 for a 1080 cause I have having trouble maintaining stable 100+ fps @ 1080p on most modern games. So if fps are important for you, then I would swap that 1070 for 1080 if its still possible.
As for the monitor do you really need a ultra-wide monitor ? I mean you can save money and get a cheaper 1440p 144hz gsync monitor and use the extra cash towards 1080.
Finally I would look into upgrading that 2600k to something more latest if you want to push your minimum fps to respectable levels. I did and my 7700k boosted my min fps by a fair amount.

I would look at your motherboard and see what is the highest cpu you can upgrade to because koolman is right your cpu can bottle neck your gpu from full bandwidth and fps etc.... If you want high refresh rate I would go for a 1440p monitor with 165hz on them. Asus,Acer,Aoc and Viewsonic have great IPS,G-sync,1440p,165hz monitors. Find the cheapest because they all good.

Have a look at this. CPU intensive games like GTA, Watchdogs2, Battlefield 1 etc will benefit greatly from higher RAM speeds and latest CPU.
To be honest you dont have to worry that much about upgrading your CPU but definitely go for 1080 if you want eye-candy while maintaining buttery smooth game-play.

Exactly, like jwcrellin says, find your self the best monitor without breaking the bank. In this case I would vote for a 1440p, 165hz, G-sync, IPS. And use that to find what system combo could get you the best fps. You will never max out your monitor if you keep playing new AAA games.
