I bought a 3600x, but wanted 5900x, but the price difference here in my country is a shame.
2021 I will upgrade for 5900x or 5800x.

Which motherboard should I choose for my future R9 5900X?

B550 or X570?

Which model would you recommend for each one?

I will not overclock and the cooling of my case and watercooler is good.

Depends what features you want?

literally nothing specific.
the only thing i would like is that it has more than 6 USB ports, some 8 or 10 ports would be nice, now anyway ...
I'm a very "common" user, but I move 50% of the time with games and 50% in light rendering.

Don't know if you upgraded yet or not, but I would highly suggest the X570 Asus Crosshair VIII Dark Hero. I just assembled my rig a couple weeks ago and it just blows me away every time I work on it. Rendering projects, video editing, compression, extractions, everything is just lightning fast. The Dark Hero is also the only motherboard that allows you to overclock for a hefty all core overclock while retaining all the benefits of single core boost / PBO.

I have tweaked my overclock following the linked video and have an everyday 4.65Ghz all core overclock and tweaked my PBO single core overclock so my two strongest cores on CCD 0 are boosting to over 5Ghz. Cinebench R20 single core score is 644 - 650 and multi-core is 9200 - 9260. I am currently working on getting 4.675 and 4.7Ghz 100% stable for all core overclock. The Dark Hero is the only motherboard that allows this level of overclocking.
