So I was working on a mini ITX system with and AMD APU. It was up and running and it was time to get ready to boot into an OS/install an OS. I walked away to grab a keyboard and when I got back the computer was off. Now ever since I cannot get the computer to boot at all. Not even the PSU fan will start spinning.. Any ideas?

Erm... the trivial questions that might sound silly - does the power outlet work and give power (if you plug anything else in it to check)?
Have you checked if the PSU switch is in ON position?

If the answer on the two questions above is Yes then I can imagine the fuse of your PSU must have blown up. Otherwise the PSU should start working even if your PC doesn't post.

Well here the thing with it, Everything should be operational. The green LED lights up on the board. I have tried resetting cmos, reseating ram, crying softly, tried without ram, tried second psu, etc Nothing seems to work 🙁

Aha, I see. From your first post I thought that even the SPU wasn't powering up. If you are getting the LED to light up I guess you are getting at least some power from the PSU.

To be honest the easiest thing to do would be to try a different PSU to make 100% sure it's not it that is causing you all the trouble. It's funny though how it worked initially and within minutes it won't even boot.
