My laptop shipped with a 128gb ssd and 1tb hdd. The SSD is obviously the boot drive (c drive) and the hdd is extra. Since I have an extra m.2 ssd slot, if I install another m.2 ssd will it expand the c drive or create another directory?

No it won't expand the C drive, you will just see another drive letter in the system.

If you want to get the main drive larger, you can clone the existing drive to the new one and then just swap them. I like Macrium Reflect to do my cloning, using a USB boot stick that is made from the program. Just make sure you clone to the right drive or you can end up cloning the new empty drive to your existing one.
